VEGGIE CUBES ROASTED TURKEY

  • • 1 tray of Gourmet Evolution Veggie Cubes
  • • 1 bag of mixed greens or 1 medium head Boston lettuce, cored and torn into bite-size pieces
  • • ½ cup pitted Kalamata olives
  • • ½ cup of cherry tomatoes halved
  • • ½ cup baby carrots sliced
  • • ¾ sliced red onion
  • For the vinaigrette:
  • • 1/4 cup fresh lemon juice (from about 2 lemons)
  • • 1/4 cup white-wine vinegar
  • • 2 teaspoons sugar
  • • 1 teaspoon coarse salt
  • • 1/4 teaspoon ground pepper
  • • 1 cup olive oil
  • 1. In a large bowl, toss together the greens, pitted Kalamata olives, cherry tomatoes, carrots and thinly sliced onion and set aside.
  • 2. For the vinaigrette, in a medium bowl or jar, combine lemon juice, vinegar, sugar, coarse salt, and ground pepper. Whisk, or cover and shake, until salt and sugar have dissolved. Add oil; whisk or shake until thoroughly combined.
  • 3. Add our delicious veggie cube toppings.
  • 4. Then incorporate the lemon vinaigrette to the salad. Season with coarse salt and ground pepper.
